Mozzarella Cheese.

Non-Consumable Materials:

1. 8 Quart steel pot. Cost $30.00 USD.

2. Cutting board. Cost $10 USD.

3. SS Spoon. $10 USD.

4. Thermometer.

Consumable Materials:

1. 1 gal. Whole Milk.

2. 1/4 tablet of rennet dissolved in 1/4 cup water.

3. 1 Tbsp of vinegar.

4. 1-2 tsp of salt.

Procedure:

1. Add milk and vinegar to pot and begin heating, slowly.

2. Once milk is at 90F, stir in rennet solution for about 30 seconds.

3. Turn heat down slightly and allow the milk to come to 105F, stirring gently, then remove from heat.

4. Cover and allow curds to develop for 5 minutes.

5. Scoop curds into a microwave safe bowl using slotted spoon, then drain off any access whey.

6. Heat curds in the microwave on high for 60 seconds.

7. Wearing gloves, knead the curds a few times to distribute the heat. Drain off whey and microwave for 60 more seconds.

8. Knead the cheese until it just starts to come together and begin stretching it out. If it starts to break while you're stretching, heat for 40 more seconds and repeat as necessary.

9. The cheese will be smooth and shiny as you're stretching it.Once it gets to that point, shape into a ball or log. You can place cheese in a salted ice bath for a few minutes.
