Recipe 9: Perogi Rev. 2.

Objective:

Non-Consumable Materials:

1. Pot. Cost $40.00 US.

2. Rolling Pin Cost $20.00 US.

3. 8" Chef's Knife. Cost $50 US.

Filling:

1. 2.5 lbs potatoes.

2. 0.5 medium onion.

3. 0.25 tsp. salt.

4. 1.0 Tbsp. Canola Oil or Butter

Procedure, Filling:

1. Boil potates, strain out wate but reserve 2 cups to make dough with.

2. Saute onions in oil. Optional, add cheese and mix well.

3. Mix in potatoes, add sauted onions and mash really well.

4. Cut out circles with biscuit cutter and fill with 1 tsp. filling.

5. Boil in salted water for 7 to 10 minutes.

Shell:

1. 2 C. Flour;

2. 1 C. Potato Water.

4. 2 eggs

5. 2.0 Tbsp. Canola Oil or Butter

Procedure, Pierogies:

1. Mix liquids egg and water.

2. In separate bowl mix flour, and optional salt.

3. Mix all together and knead until smooth. Then let rest ufor half an hour.

4. Roll 1/8 in. dough.

5. Cut out circles, 2.75 to 3 in., with biscuit cutter and fill with 1 tsp. filling.

6. Boil in salted water for 7 to 10 minutes, about 15 pierogies at a time
